Why You’ll Love This Recipe

Most high-protein sauces feel like a compromise. This one doesn’t.

It’s rich, creamy, and genuinely satisfying — and it comes together in 15 minutes with ingredients you probably already have. Once you make it, it tends to stay in the rotation.

How It Works

The combination of cottage cheese and marinara does more than you’d expect.

Cottage cheese brings the protein and a silky base. Marinara brings the flavor. Blend them together properly and the result is a smooth, creamy sauce with no trace of the cottage cheese texture people worry about. That step is what makes this work.

Best Ways to Use It

Over pasta, alongside chicken, as a dip, or as a base for other meals. It reheats well and holds up in the fridge, which makes it one of the better things to have prepped and ready for the week.

Tools That Make This Turn Out Right

The ingredients are simple. The process is what matters here.

Most people run into the same three problems with this type of recipe:

  • grainy texture from under-blending
  • uneven thickening from inconsistent heat
  • extra dishes from unnecessary transfers

The right tools make all of that a non-issue.

  • Immersion blender (easiest option)
Blend directly in the pot. No transfers, no extra bowls, no mess. This is the fastest way to get a completely smooth sauce, and it makes cleanup almost instant.

  • Blender (if you prefer one)

  • Saucepan (for even heating)
The right size for small batches like this. Heats evenly so the sauce thickens properly without scorching the bottom.

  • Silicone meal prep tray (for batch cooking)
Make a double batch, freeze it in the tray, then transfer the portions to a freezer bag. You’ll always have a serving ready to go without any extra effort.

Dry Ingredients

  • Garlic powder, to taste
  • Onion powder, to taste
  • Mixed herbs, to taste
  • Salt and pepper, to taste
  • 1 1/2 tbsp cornflour

Wet Ingredients

  • 1 cup marinara sauce
  • 1 cup cottage cheese
  • 1 cup broth
  • Splash of water (to mix with cornflour)

Optional

  • Fresh chilli, chopped

Instructions

  1. In a container or directly in your pot, combine the marinara sauce, cottage cheese, broth, garlic powder, onion powder, mixed herbs, salt, and pepper.
  2. Blend until completely smooth using an immersion blender or standard blender. Blending properly is what gives this a creamy texture instead of a grainy one.
  3. In a small bowl, mix the cornflour with a splash of water to create a slurry.
  4. Pour the blended mixture into a saucepan over medium heat.
  5. Add the cornflour slurry and stir well.
  6. Cook for 5–10 minutes, stirring occasionally, until the sauce thickens and becomes smooth and creamy.
  7. Adjust seasoning to taste and serve hot.

Tips

  • Blend thoroughly — this is the step that removes any trace of cottage cheese texture.
  • Season boldly. This recipe rewards it.
  • Keep stirring once the cornflour goes in. Consistent heat is what keeps it lump-free.
  • Too thick? A splash of broth brings it right back.

Variations

  • Stir in cooked ground turkey or chicken and serve over pasta for a complete meal.
  • Use vegetable broth for something lighter, or chicken broth for more depth.
  • Finish with parmesan for extra richness.

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • Freeze in portions and reheat straight from frozen whenever you need it.

FAQ

Does it taste like cottage cheese?

Not at all. Once it's blended and cooked, it tastes exactly like a rich, creamy tomato sauce.

Can I skip the cornflour?

You can, but the sauce will be noticeably thinner. The cornflour is what gives it that thick, restaurant-style texture.

What can I use this with?

Pasta, grilled chicken, as a dip, or as a pizza base. It works well with almost anything.
