Roasted Broccoli and Feta Protein Soup
Roasted broccoli, salty feta and a squeeze of lemon make a creamy bowl with plenty of flavor. White beans and cottage cheese blend into the soup, giving it body without needing a splash of cream.
Why this recipe works
The oven does the flavor-building first. Broccoli, onion, garlic and feta roast together, then everything gets blended with broth, spinach and beans. You end up with about four generous bowls, depending on how much water you add at the end.
The soup is thick enough for a proper spoonful, but easy to loosen if you prefer it lighter. Add the lemon before the final seasoning check: that little bit of brightness makes a difference.
A few ingredients that matter
Start with 5 cups of broccoli florets, roughly 14 oz / 400 g. That weight is a guide because small florets pack more tightly than large ones. Cut them into similar-sized pieces so they roast evenly.
The 6 oz / 170 g feta brings plenty of salt already, and broth varies by brand. Season lightly before roasting, then taste the blended soup before adding more. Plain cannellini beans give the soup body without a strong bean flavor.
Tools worth having
A roomy roasting dish lets the broccoli brown rather than sit in a crowded pile. For blending, choose either a countertop blender specifically rated for hot liquids or an immersion blender used in a deep saucepan. A sealed smoothie cup is not the place for hot soup.
If you’re shopping for a blender, check its hot-liquid instructions and usable hot-fill limit, not just the advertised jug size. This is a substantial batch, so working in batches may still be necessary. A ladle and wide containers make portioning easier afterward.

Tips
- Use the lower end of the olive-oil range for a lighter roast, or the higher end for a richer soup.
- Lower-sodium broth gives you more control over the seasoning.
- Vegetable broth is an optional swap for bone broth, though it will change the nutrition. Check your feta’s ingredients if you need the whole dish to suit a vegetarian diet.
- Reduce the chili flakes if you prefer a mild bowl.
Storage
- Divide leftovers into shallow containers and refrigerate promptly, within two hours. Keep at 40°F / 4°C or below and use within 3–4 days. Reheat only the portion you need, stirring until it reaches 165°F / 74°C. Add a little water if it has thickened.
FAQ
Can I blend it all in one go?
Only if your blender’s instructions and hot-fill limit allow it. Batches are safer than overfilling.
How many bowls does it make?
About four generous servings is a practical estimate, not a measured yield. Thinning it with water or using smaller bowls will change that.
